Dorchester Collection appoints new General Manager of Hotel Eden, Rome

Dorchester Collection has announced the appointment of Tristan Delaittre as general manager of Rome's Hotel Eden, effective from October 1, 2026. Having held senior leadership positions across Dorchester Collection for more than seven years, Delaittre joins Hotel Eden as Rome continues to strengthen its position as one of Europe's leading luxury destinations. With extensive experience in luxury hospitality, hotel operations, and gastronomy, Delaittre takes on the role at Hotel Eden following his most recent position as Dorchester Collection's corporate director of food and beverage. In this position, he has overseen the food and beverage strategy across Dorchester Collection's ten hotels, shaping the brand's vibrant dining destinations and leading the development of new concepts for upcoming hotel openings, including The Alba in Dubai (2028) and Tokyo (2029).


Prior to this, Delaittre served as food and beverage director at Dorchester Collection's Le Meurice in Paris, where he directed operations across the hotel's acclaimed restaurants, bars, events, and in-room dining, including the two-Michelin-starred Restaurant le Meurice Alain Ducasse and Cedric Grolet's celebrated pastry boutique.


Before joining Dorchester Collection, Delaittre's career took him through luxury hotel, revenue, and culinary operations across Europe.
